No Brace Today & I NEED Recipes fast!


No Brace...unless it hurts!


I am a fairly coordinated person until I took the big brace off and have been wearing the smaller one. When I walked with the larger brace (toe to knee) I was a slow mover. I would compensate w/my right leg speeding it up so that I could move faster, but they were still small steps. That was okay then. Since I have been walking with the smaller brace I find myself still walking in the same fashion, but don't realize it until I stub my toe on something. I'm taking bigger steps with my right leg but they are at the same fast speed as I still am trying to (compensate) protect my left ankle; I'm going to break a toe if I don't realize I'm walking funny before I hit the dresser w/my foot again. My theory is only speculation.

Today, however, I am walking without a brace. To be honest, I wasn't planning on going without but I simply forgot to put it on. I remembered and quickly got it as I was out the door my way to school. At least it was the brace and not my pants or something.

Recipes NEEDED!

My wife and I try to make our dinner plans weekly so we have only one planned trip to the grocery store. Of course there are those times that we have to go fifty times a week for things we forgot. Here lately though -- we have been stumped on what to make.

So I'm coming to you all for help.

We want good healthy food. What do you have to offer?


Please give me recipes! Give me your best, simplest, and healthiest recipes...please. I will try mostly anything.

I can not have chocolate, but my wife can. If it has chocolate - I'm sorry I won't be able to try.

Lowfat Chili:

1 pound ground turkey or ground beef
1 jar salsa (your choice)
1 can corn (not creamed corn, gross)
1 egg
2/3 cup water
Hot Sauce to taste
Beans (if you want, I left them out because they're gross)

Brown your turkey/hamburger
Drain and rinse, then return to pan
Add salsa, corn, water, hot sauce, egg and beans.

Reduce heat and simmer for 15 minutes.

Easy as pie (probably easier).

My family & I love this recipe

Low-Fat Chicken Enchiladas

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:

* 4 corn tortillas
* 1 1/2 cups shredded cooked chicken (skinless, white meat)
* 1/2 cup black beans
* 1/2 cup sweet corn
* 1 cup medium or hot salsa
* 1 cup plain low fat yogurt
* 1/2 cup reduced fat sour cream
* 1/2 cup reduced fat shredded Jack cheese

Preparation:
Preheat oven to 350 degrees.

Coat an 8-inch by 8-inch baking dish with nonstick cooking spray. Warm tortillas according to instructions on package.

Combine shredded chicken with black beans and sweet corn. Mix salsa, yogurt and sour cream and spoon half the salsa mixture into the chicken, beans and corn. Blend well.

Divide chicken mixture among the tortillas. Carefully roll tortillas and place them seam down in the baking dish. Spoon remaining salsa mixture over the tortillas. Sprinkle cheese on top. Cover with foil and bake for 30 minutes.

Serves 4.

1 can drained corn
1 can (4 ounces) drained green chilies
1/2 cup shredded cheddar (calories are based off of fat free)
3/4 cup flour
2/3 cup milk
2 eggs

Spray 9 inch pie plate with non stick spray. Mix corn, chicken and green chilies. Spread mixture into pie plate.

Mix eggs, milk and flour. Pour over chicken.

Bake uncovered at 400 degrees for 25-30 minutes. Sprinkle with cheese during the last 5 minutes of baking.

Serve with sour cream and salsa.

I'm a big fan of Zucchini Chicken Carbonara. I use zucchini noodles (basically, spiral-cut zucchini, you could always cut it into strips, too) or you could use whole wheat pasta or whatever.

I saute a chicken breast, cut up into tiny cubes. While it's cooking, I also nuke about two slices of bacon. In addition, I melt some laughing cow cheese in a coffee mug in the microwave. Once it is nice and creamy, I crack an egg into the mug, stir it up with the cheese, and sprinkle a little garlic powder and parmesan cheese in it.

Once the chicken is done, I dump some frozen mixed veggies in with it. I chop up the bacon, toss that in there, and toss it with the egg-cheese mixture. Then, I pour it over the zucchini noodles.

Pretty low-cal, not TOO terribly hard to make, and pretty good.

Other than chili that was very similar to your first commenter, I actually stay away from recipes. I try and cook simple meat, veg, starch items only using seasonings over sauces. I find that recipes can sometimes introduce portioning issues (for me) and even with software difficulties monitoring for caloric content. Yes, it can be done and I certainly have done it. Regardless, for me it is what will get steamed, grilled, roasted with what seasoning blend, i.e. lemon-pepper, herb-onion, etc.

Sometimes it can get boring, but it really helps to keep myself eating cleanly and simply.

Sorry for the non-answer to your question...more of a philosophy.

@Kyle - that is what I normally do. I am perfectly fine with routine. My wife likes the variety though.

Check out eatingwell.com. There are some awesome recipes there -- I strongly recommend the mustard maple pork tenderloin.

Here is a recipe I make that really satisfies me and is really simple, healthy and not many calories.

Eggs Extraordinaire

3 Eggs
1/2 Can Stewed Tomatoes
1 cup Shredded Cheddar Cheese
3 Slices of Ham lunch meat

Put stewed tomatoes in frying pan and heat on medium flame. When hot (you will see juice steaming a bit) add in eggs and whisk with fork.

Cut up ham into small, short strips and add to eggs/tomatoes.

Lastly add in cheese. After melted, serve on plate or bowl. Add a little salt (I do). Enjoy it.

Hi there. Thanks for following my blog. I stopped in to see what you were all about and see you're in need. I just made this for my parents last week and it's already being requested next weekend when we rent a beach house. Give it a try. I substituted with healthier options where I could, but this was the original recipe. There are lighter options when it comes to tortillas and I used the 98% fat free soup and fat free sour cream. Hope you like it.

EASY CHICKEN AND CHEESE ENCHILADAS

1 can (10 3/4 oz) Campbell's Condensed Cream of Chicken Soup
2 cups chopped cooked chicken
1/2 cup shredded Monterey Jack cheese
1/2 cup sour cream
1 cup salsa
2 tsp. chili powder
6 flour tortillas (6"), warmed
1 green onion
1 small tomato, chopped

1. Stir the soup. sour cream, salsa, and chili powder in a medium bowl.

2. Stir 1 cup salsa mixture, chicken and cheese in large bowl.

3. Divide chicken mixture among tortillas. Roll up the tortillas and place seamside up in 2-qt. shallow baking dish. Pour remaining salsa mixture over filled tortillas. Cover baking dish.

4. Bake at 350 degrees F for 40 mins or until enchiladas are hot and bubbling. Top with tomato and onion.

Enjoy.

I kinda do what Kyle said a lot- just grill some chicken, then make veggies/rice/pasta to go with it. Salmon too!

Sorry I'm not much help. Tomorrow I'm going to make some pasta, toss it with pesto and cut up some grilled chicken breast for a pasta salad kinda thing. Then probably make a salad with it.

Whenever I usually want to make something, I try to look for the simplest recipe online and then just "lighten" it up. Otherwise with normal "diet" recipes they get so confusing and complicated!

I like to make up some couscous made with chicken broth. Mix in some black beans, green onions, bell peppers, maybe some bean sprouts, corn, or whatever I have on hand. Then I make a dressing with olive oil, red wine vinegar, garlic, lime juice, cilantro, salt and pepper. It's really delicious. Couscous is so filling for me and it's super easy to make.

I've published exactly one recipe and it wasn't even really my own- so I'm not a cook. And I live alone so I rarely make elaborate meals. But these are good if you want a change from meat. They are very different from anything you've ever tried though, so proceed with caution if you are a picky eater.

Healthy snack/dessert option:

Pumpkin pudding
Ingredients:
(this recipe makes 1 serving)

* 0.5c pumpkin puree
* 0.5c soft silken tofu
* 0.25 tsp pumpkin pie spice
* 0.25 tsp cinnamon
* stevia/agave/sugar to taste

Throw everything into a food processor and go to town. This taste just like pumpkin pie filling but you have your protein and complex carbs. Let me know if you try it!

Lentil Sweet Potato Stew
Ingredients:

* 1 tbs. olive oil
* 3 big leeks (white and light green parts only), cut into 1/2 inch half-moons
* 28 oz. can whole tomatoes, drained
* 2 large sweet potatoes, peeled and cubed
* 1 bunch Swiss chard or kale, roughly chopped
* 1/2 cup brown lentils, dry
* 1 tbs. fresh thyme
* salt and pepper to taste
* cayenne pepper to taste
* Feta cheese (optional, but OH SO GOOD!)

1. Heat olive oil in a large pot set over medium heat. Add leeks and cook until soft, about 5 minutes.


2. Add tomatoes and cook another 5 minutes or until tomatoes break apart.

3. Add six cups of water and bring to a boil. Stir in sweet potatoes, Swiss chard, lentils, thyme, salt, black pepper and cayenne pepper. Lower heat, cover pot and let simmer about 20 - 30 minutes, or until sweet potato and lentils cooked through.

5. ENJOY with a sprinkle of feta and a little more cayenne on top!

It's really good! It's slightly sweet, savory, you get the heat from the cayenne and you get lots of veggies! Does need a bit more protein though.

This recipe is fairly fast, uber easy, vegetarian and CHEAP!

Black Bean and Corn Quesadillas

1 can Black Beans
1 sm. can whole corn
1 clove garlic
1 onion
1 tsp. brown sugar (adds so much to the dish)
1 (or half) bell pepper (my hubby doesn't like it so I use a minimal amount)
1 cup(ish) your fav. salsa (I never measure, I assume I use roughly a cup)
6-8 tortillas (makes 5-6 of w/lg. tortillas or 7-8 w/sm. tortillas)
*shredded cheese (mexican blend, lowfat kind..whatever you normally use)
*EVOO or butter

Chop onion and bell pepper then saute with garlic for 3-5 minutes. Add beans, corn, brown sugar and salsa. Simmer for a bit (5-7 minutes). Remove from stove. Heat either butter or EVOO, add a tortilla, 2-3 TBSP. of bean mixture and as much cheese as you can add without the dish becoming unhealthy :) Fold tortilla and flip in about a minute or so. Repeat with remaining tortillas.

There is so much you can add to this and it is cheap! My husband likes rice so occasionally we'll add brown rice. My almost 2 year old LOVES this dish.

Hey, I'm a new reader and I just came across the entry for recipes and know of one you might enjoy! I'm a vegetarian and a Nutrition major in college and also lost 65 lbs over the course of 2 semesters in college (spring 2008 and spring 2009), so I would love to help!

My favorite recipe as of late is REALLY simply. I love love love mexican, but it's really unhealthy. So I make quesadilla's using spinach, brown rice, and black beans. There's a brand of tortillas that are low calorie/high fiber (name escapes me) that I like and if you use low fat cheese and pair with some avocado and fresh salsa, it really makes a filling dinner that's also nutritious and full of fiber. You could also add some lean chicken if you like your meat.

I've also used the same idea but used tofu and black beans (drained) scrambled with some peppers, olive oil, and diced tomatoes and omitted the spinach. Anyways, I love experimenting with someone "odd" combinations. They usually turn out yummy & I hope that gives you and your wife some food inspirations :D
